Giulio's talent for turning dreams into reality is a widely recognized industry benchmark. His career gained momentum in Australia, where he led and developed concepts for independent bars. After the resounding success of Miss Moneypenny’s—awarded the title of Best Regional Bar in Australia—Giulio expanded his expertise, helping major operators establish high-caliber bar programs across multiple global locations. He played a pivotal role in shaping beverage programs at Hakkasan and Coya throughout Europe and the Middle East. Giulio eventually joined the Dover Yard and 1 Hotels team, where, alongside Marco Grisafi, he helped define the foundation of our exceptional program. He currently develops beverage programs for Starwood Hotels across Europe and has redefined the way sustainability is communicated to customers.
