Raising a glass to innovation: The Pub Show team explores the latest drinks trends
Last week The Pub Show team headed to Southwark Park for the 2026 London Craft Beer Festival, joining drinks producers, hospitality professionals and beer lovers for a packed celebration of brewing creativity.
Bringing together more than 100 breweries and over 800 beers, the festival offered an excellent opportunity to discover emerging flavours, explore the trends shaping the drinks market and catch up with businesses preparing to exhibit at The Pub Show in April 2027.
Among the brands we met were Fierce Beer, Beyond Belief Brewing and Soplica, each bringing something distinctive to the pub and bar sector.
Fierce Beer: bold brewing from Aberdeen
Founded as a home-brewing project and producing commercially since 2016, Fierce Beer is a modern Scottish brewery known for creating bold, flavour-packed beers.
Inspired by the characterful beers emerging from the West Coast of the US during the 2010s, the Aberdeen-based brewery has developed a varied range spanning modern IPAs, rich stouts, fruit-led beers and accessible lagers, alongside gluten-free, vegan and low-and-no-alcohol options.
Fierce also operates bars in Aberdeen and Edinburgh, giving the team first-hand insight into what consumers want from contemporary beer venues. Its adventurous flavours and distinctive branding make it a strong proposition for pubs looking to add personality and variety to their drinks lists.

Beyond Belief Brewing: turning surplus food into beer
Beyond Belief Brewing combines craft brewing with a fresh approach to one of the hospitality industry’s biggest challenges: food waste.
The company creates beer using surplus ingredients that might otherwise be discarded, including fresh pasta, bread, fruit and even fondant fancies. Its patented brewing process can use surplus fresh pasta as a replacement for a proportion of the base malt ordinarily required to make beer.
It is an approach designed to demonstrate that sustainability need not come at the expense of flavour or quality. By transforming overlooked ingredients into commercially appealing craft beers, Beyond Belief gives publicans a memorable product story to share with customers while supporting a more circular food and drink system.
Beyond Belief also hosted tasting sessions during the festival, giving attendees an opportunity to learn more about its unconventional ingredients and brewing process.
The brewery will continue the conversation with pub and bar operators when it exhibits at The Pub Show in April 2027.
Soplica: over 130 years of Polish tradition
While beer naturally took centre stage at the festival, the visit also highlighted the wider variety and innovation now expected from pub and bar drinks menus.
Soplica is one of Poland’s oldest alcohol brands, with a heritage stretching back more than 130 years. Its extensive portfolio includes traditional fruit liqueurs, flavoured spirits, vodka and bitters, bringing together carefully selected fruit, quality spirit and recipes informed by generations of Polish craftsmanship.
Fruit flavours are central to the brand’s identity, with varieties drawing on ingredients such as cherry, raspberry, lemon, plum and walnut. The range can be served in shots, enjoyed neat or used to introduce distinctive flavours to cocktails and other mixed drinks.
